Blueberry Buckle

It's your lucky day... I'm posting my favorite recipe of all time: Blueberry Buckle!!!

It's in no way healthy (other than the blueberries of course!) but it's soooo amazing! It's the type of thing you make for dessert when you're having company and you want lots of "ooohs and aahhs", or when you've had "that kind of week" and you want to pig out all by yourself!

I found this recipe years ago in the Washington Post when we lived in Maryland and I've been making tons of Buckle ever since. There was a short period of time this year when I thought I had actually lost the recipe card and it was pretty much the end of the world. I tried a similar recipe that I found online and it was no where near as good. So when I recovered the recipe earlier this week, I decided I needed to post it on my blog, not only to share it with the world (or my 5 loyal readers), but also so I could have it safely preserved online. I meant to take a picture to post along with the recipe, but we ate it all way too fast and I forgot! It's that good.

Blueberry Buckle

Batter ingredients:
1/2 stick butter
1/2 cup sugar
1 egg
3/4 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/3 cup milk
1 tsp. vanilla
2 cups blueberries

Topping ingredients:
1/2 cup sugar
1/3 cup flour
1 tsp. cinnamon
6 tbsp. butter, cut into dice

Pre-heat oven to 350. Butter an 8" square baking dish. Use electric mixer to cream butter and sugar until light and fluffy. Add egg and vanilla, mix until combined. In a small bowl, whisk together flour, baking powder and salt. Add dry ingredients to the batter, alternating with milk, mixing until smooth and blended. Pour batter into pan and cover with blueberries. To make topping, whisk sugar, flour and cinnamon in a separate bowl. Add butter and work with a fork or fingers until crumbly (this part is a little frustrating, but don't worry, you can really mess it up!). Sprinkle over berries. Bake 40 minutes or until golden brown (NOTE: in our oven in Maryland, it took 40 minutes, but for some reason in our oven here, it takes 68 minutes to reach perfection! So yours may vary also.)
Serve warm with vanilla ice cream (essential!!) and experience true happiness! :)
