Lately I've been wondering about what everyone else eats! Especially people that stay at home all day. I feel a little bored with everything lately but I'm having trouble thinking of new things to eat. I thought it might be useful if other people would comment on what they ate regularly so I can get some new ideas. Here are my usuals:
Breakfast:
cinnamon-raisin toast
cereal

Lunch:
sandwiches (usually ham or turkey and cheese)
quesadilla
soup (out of a Cambell's can)
Snacks:

salmon and other fish

Dessert (actually Eric and I have been really good about not eating dessert lately, but we probably just need to think of some healthier options instead of cutting it out all together!):

Since it's summer time and most fruits are in season, I like snacking on fresh pineapple, blueberries, strawberries, etc. Also, for breakfast a tasty and healthy concoction is yogurt, Fiber One, and blueberries mixed together. Since Brian is gone during dinner time and I'm on my own, I've gotten in the habit of eating peanut butter and jelly sandwiches. I feel like a kid again eating them, and I'd forgotten how good they are! That probably doesn't thrill you at all. One of my favorite foods of all time that I didn't see on your list is mac and cheese, but whenever I get in a rut and want some new recipes I go to www.southernliving.com. They always have good ones!
I've been loving Fuji apples with peanut butter for a snack lately.
For breakfast this summer, I've been making fresh fruit smoothies. Just put cut bannannas, strawberries or any fruit combination and a little bit of apple juice in the blender and voila! It's quick and healthy and fills you up.
For dinner...one of my quick go to items is frozen meatballs. You don't have to thaw them...they go straight from the freezer to the stove. You can make quick meatball subs or spagetti and meatballs in about 30 minutes.
I think your list sounds great! I usually have yogurt with blueberries and granola for breakfast and salad for lunch. I'm not much of a snacker, but if I do snack, it's always something salty. Sometimes I feel like dinner is too much of a free-for-all with us. After working all day, I'm not good at planning ahead for dinner, and often we aren't very hungry. We do eat lots of Morningstar black bean burgers and chicken patties.

Hey! I had just one more piece of advice to get you out of your "cooking slump." Sometimes I think I'm tired of a certain food like chicken, but I realize that I just need to find a new way to cook it. For example, instead of making my standard chicken cassaroles or bbq chicken, I'll try a new marinade (they have so many varieties in the grocery store these days!) and grill it. Some friends of ours introduced us to Carribean Jerk marinade last year. It's really good for grilled pork chops!
